Another red velvet cookie recipe??

1 (8 ounce) brick cream cheese, room temperature
1/2 cup butter, room temperature (1 stick)
1 egg
1 tablespoon vanilla extract
1 (18 ounce) box red velvet cake mix
confectioners’ sugar, for rolling and dusting

Directions:

1In a large bowl with an electric mixer, cream the cream cheese and butter until smooth.
2Beat in the egg.
3Beat in the vanilla extract.
4Beat in the cake mix.
5Cover and refrigerate for at least 2 hours to firm up so that you can roll the batter into balls.I’ve chilled batter overnight and it comes out fine.
6After batter has chilled and you’re ready to make the cookies, preheat the oven to 350°F.
7Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar.
8Place on an ungreased cookie sheet, 2 inches apart.
9Bake 12 minutes. The cookies should remain soft and gooey.
10Cool completely and sprinkle with more confectioners’ sugar, if desired.

Red Velvet Cookies with White Chocolate Chunks

1 box of Red Velvet Cake Mix
1 cup of All-Purpose Flour
2 sticks of softened butter
1 egg
2 cups of White Chocolate Chunks

Preheat oven to 350 degrees. In a mixing bowl, add butter and mix until soft and fluffy. Slowly add cake mix and flour. Once combined, add egg and mix completely. Add white chocolate chunks, and mix for a minute or so until well combined. Form dough into one inch balls, and place into the oven for 8-10 minutes. {Yields about 24 small cookies.}

Cake batter cookies??

Everything is better when it tastes like cake batter. Everything. I found a cookie recipe this morning via pinterest.com that uses cake mix to make cookies and I must try it… as soon as I get rid of all the other goodies we’ve somehow accumulated. Or tonight. Whichever.

P.S. I believe the recipe originally came from here.

Ingredients:

3/4 cup flour
1 1/4 cup funfetti cake mix
1/4 tsp. baking soda
3/4 cup softened butter
1 egg
1 egg yolk
2 tsp. vanilla
1/2 cup sugar
1/2 cup brown sugar
1 cup chocolate chips

Directions:

Cream together the butter and sugars. Mix in the egg yolk, egg, and vanilla until creamy.
Add in the flour, cake mix, and baking soda.
Stir in the chocolate chips.
Refrigerate for at least an hour.
Preheat oven to 350.
Scoop heaping tablespoons of dough onto cookie sheets.
Bake for 12-15 minutes, until the edges are golden.

Yum yum.

It has been brought to my attention that I left something crucial out of my last post.

Weather permitting, there will be trips over the pass to visit my lovely and exceedingly wonderful best friend. We will enjoy tea at Walden’s (Waldens?) and movies and pazookie (or however you spell it) and whatever else we feel like doing like possibly going way out of our way to Target when there are closer options nearby.

And I love her.

I’ve almost made it.

Jude gets his two month shots in exactly one week. That means no more sitting in the car forever waiting for Corey to find a rug in Home Depot when he was supposed to just be buying trash cans, or having to get a babysitter to do grocery shopping. I will be free to wander through the mall for hours “getting exercise” and I’ll get big, burly arms from carrying the car seat and Corey’s gigantic bag of dry cleaning to and from the car.

There’s also the baby shower. Yes. Another baby shower. But this time, I’m going to know hardly anyone and I’ll be expected to give my little boy to complete strangers because they bought him an outfit and some butt wipes. Can you hear my enthusiasm?? Really, I think it’ll be fun and a good chance to meet more of Corey’s family. I’m just the opposite of excited about handing my baby over to strangers. Well, to be honest, sometimes I’m not excited to hand him over to his grandparents and they are definitely not strangers. But still. He’s mine. Ya know?

With Jude’s shots also comes a trip to the ocean. Yes. I finally get to go back to San Francisco. The exact date is still undetermined, but it will be soon. This month, I’m hoping. I get to share one of my favorite places with my little guy. How wonderful is that? I better get something to bundle him up in, because it’s “damn cold” out there. :)

It’s cloudy today. I’m hoping for some rain. It’s been raining in NV… Didn’t I come here with the promise of rain? Why is it at home?

Update: I had my little guy on August 15 at 4:47am. He was 8 pounds and 2 ounces and 22 inches long. He’s the sweetest little thing you ever saw. We love him even when he poops through his outfit. Of course. :)

I set up skype with my parents last night. At one point I could see them but they couldn’t see me. They reminded me of this youtube video. Once we had it working, I had to say hello to our daschund Norman and the pomeranian Teddi and my cat Paxton aka Baby. The other cat, Beau, must not have been around. I must confess that I quite enjoyed seeing the little animals, even though it was a weird thing to do.

Being a stay at home mom (the little guy’s birth certificate even says I’m a “homemaker”) is not as easy and relaxing as it sounds. I feel guilty whenever I’m not holding him. I feel like an awful mom when he’s awake and I’m not playing with him. It’s hard to find a nice balance between sleeping when he sleeps (Where does that fit in, exactly??), taking care of the house when he sleeps, feeding him at the right time, playing with him, remembering to eat, showering… And I constantly worry that I’m not reading to him enough/playing with him enough/that he’s getting a flat head/that he isn’t eating enough/that he’s sleeping too much…

Wow life is different now. I’m excited because I think my vacuum finally came. How did that happen? (Not the vacuum. That was dropped off by UPS.) I should have been sleeping instead of writing this. I should have been doing the dishes instead of sleeping. And I still need a shower.

I have officially passed my due date.

Half the time I’m thankful that I have. It means more time that I can spend with my cute husband. It means I can sleep longer than an hour. It means I don’t have to change any diapers or wonder whywhywhy is (s)he still crying?? It means I only have to take care of myself. But that just sounds really selfish… That hasn’t occurred to me before… Is my hesitance at doing this whole parenting thing really just me being selfish because of what I have to give up?

The other half of the time I just want to drive to the hospital right away and tell them I am not leaving until they get this little person out. I really do want to meet my little Jude or Charlotte. I want to have snuggle time and fun dress up time and time just learning who (s)he is. I also want to get the little thing out before it gets any bigger, if I’m being totally honest.

So we’ll just go with I’m torn about passing my due date. I am going to spend some time thinking and in prayer about my realization, though.
